The husband is a coffee lover and he is a purist as far as coffee is concerned (that means filter coffee made from ground beans). In summers, coffee is a bit strong for the tummy and that's where this delightful Mocha Kulfi comes into the picture. I spotted this Mocha Kulfi recipe in May Issue of BBC GoodFood India Magazine and since it was super easy, had to try it ASAP. The Mocha Kulfi turned out to be a delightfully decadent Kulfi with a dominating coffee flavor, which becomes addictive to the tongue with every spoonful.
The recipe, as mentioned earlier is in BBC GoodFood India Magazine May Issue. I am copying it here for my readers benefit (and in no way claim it to be mine!!)
Milk - 2 Cups
Sugar - 6 Tablespoons
Instant Coffee Poweder - 2 Tablespoons+extra for dusting (I used nestle)
Condensed Milk - 200g
Conrflour - 2 Tablespoons
- Mix the milk and sugar together and bring to a boil. Add the coffee powder and mix well. Add the Condensed milk to the mix and let it simmer for 3-4 minutes.
- Meanwhile, mix the cornflour and water (2 tablespoons) to make a slurry. Add this slurry to the mix and stir for a couple of minutes until the mix thickens. Remove from flame and let it cool for 10 minutes.
- Pour the cooled mix to an aluminium loaf tin (or a plastic tiffin as I did) and freeze to set for 6-8 hours.
- To serve, remove from tin and slice, dust with coffee powder and enjoy eating it!!
